Nattu Kozhi Kuzhambu Recipe in Chettinad Kulambu Style

Nattu Kozhi Kuzhambu 

Nattu Kozhi Kuzhambu is very delicious. chettinad is famous for non veg food preparation especially in nattu koli kulambu preparation. You might have tried many varieties of non vegetarian food recipes but the recipes prepared with chicken Nattu Kozhi are excellent in taste. I like the taste of Nattu Kozhi fry and Nattu Kozhi masala gravy. Here I have given the preparation method of Nattu Kozhi Kuzhambu in gramathu style.

 

Nattu Kozhi Kuzhambu Recipe Ingredients

 

 Nattu Kozhi curry (chicken) 1/2kg

Chopped onion 2

Chopped tomatoes 2

Green chillies 2

Red chillies 2

Cinnamon1

Garlic poondu 8

Ginger 50gm

Cumin seeds 2tsp

Poppy seeds 1tsp

Pepper powder 1 tsp

Aniseed (Sombu) 1tsp

Brinji leaves 1

Turmeric powder a pinch

Chilli powder (sambar powder) 2tsp

Coriander powder 1tsp

Coconut grated 1cup

Lemon 1/2

Curry leaves as required

Oil as required

Salt as per taste

 

How to prepare Chettinad Nattu Kozhi Kulambu

·         Make a paste of ginger and garlic. Clean and cut Nattu Kozhi curry.

 

·         Add pepper powder, jeera powder, turmeric powder and chilli powder.


·         Mix well and add lemon juice. Keep it aside this Nattu Kozhi masala mixed.

 

·         Grind the grated coconut by adding Poppy seeds, Aniseed, cumin seeds, green chillies and pepper.

 

·         Take a gravy preparing vessel, pour some oil and put Brinji leaves, curry leaves, Cinnamon and ginger garlic paste.

 

·         Mix well and add the onion let it to become golden colour. Then add the chopped tomatoes.

 

·         Then add the masala chicken fry well without adding water for some time in low flame.


·         When the chicken is cooked three fourth, add the ground Nattu Kozhi Kuzhambu masala.

 

·         Mix well and add salt as per your taste. Close the lid and serve with rice or chapatti.

Onion 1 cup
Tomatoes 2
Pavakkai 1/4kg
Salt as required
Oil 4tsp
Mustard 1tsp
Curry leaves as req.
Chilli powder 1tsp
Coriander powder 1tsp
Poondu garlic 10
Tamarind juice 50ml
Jaggery powdered 1tsp

How to make pavakkai kuzhambu
  1. Wash and chop onion and tomatoes
  2. Chop bitter guard pavakkai into small slices
  3. Take a pan, add mustard and curry leaves
  4. Then add onion, tomato slices and pavakkai
  5. Fry well for 10 to 15 minutes by keeping in sim flame
  6. Then add turmeric, coriander and chilli powder powder
  7. Fry for a minute and add 3 cups of water, add salt
  8. Add tamarind juice mix well and finally add Jaggery powder
  9. Let pavakkai kulambu recipe to boil for 15minutes.
  10. The delicious pavakkai kara kuzhambu is ready to taste

How to Prepare Kara Kuzhambu recipe south Indian Style
Preparation of Kara Kuzhambu is very simple and easy, here is the method for you
Keep ready the ingredients, wash the tomatoes and onion
Peel the skin of onion and garlic, chop it into medium sized. Cut the tomatoes
Fry Kara Kuzhambu powder Ingredients by adding 1tsp of oil
Cool it and make hand made powder or by using the mixer grinder
Take a thick bottomed pan, pour some oil and heat in medium flame
Add mustard, cumin seeds, fenugreek seeds, urad dal and curry leaves
Now add the chopped onion and garlic fry well in low flame and add the chopped tomato
Add chilli powder, turmeric powder and Kara Kuzhambu powder, mix well
Then add the tamarind juice, a cup of water and salt. Let this to boil for 10 to 15 minutes

Urad Dal 1tsp
Lentil 1tsp
Mustard 1tsp
Curry leaves as required
Turmeric powder a pinch
Asafetida a pinch
Gingelly oil 2tsp
Red chillies Dry 5
Tamarind juice solid 50ml
Fenugreek seeds 1tsp
Salt as required

How to Prepare Sundakkai Vathal Kuzhambu in Tamil Style
Fry the ingredients of Urad dal, lentil, red chillies and fenugreek seeds.
Grind the fried ingredients and make a powder.
 Take kulambu vessel and pour some oil, fry the mustard and curry leaves.
Then keep the stove in sim and fry the  Sundakkai well
Then add the ground Sundakkai Vathal Kuzhambu masala ingredients
Add tamarind juice, salt and turmeric powder mix well and add water
Boil for 15 minute and finely add 2tsp of Gingelly oil
Sundakkai Vathal Kuzhambu in Tamil Nadu style is ready taste.

Ennai Kathirikkai Kuzhambu Recipe in chettinad Kara Kulambu Style


Ennai Kathirikkai Kuzhambu Recipe
Ennai Kathirikkai Kuzhambu egg plant recipe is Tamil traditional food, still liked by all age group people. I have given the simple preparation method which almost likes chettinad ennai kathirikkai kuzhambu recipe preparation, the ifference is in chettinad recipe tamarind is used more and instead of garam maslala, chilli powder is used.  

Ingredients Required for Ennai Kathirikkai Kuzhambu Recipe
Purple Kathirikkai Brinjal: 6 no
Sambar oinion: 1 cup
Tomato: 2
Ginger garlic paste: 1tsp
Garam Masala:  1/4tsp
Tamarind juice: 2tsp
Jaggery (powdered): 2tsp
Coriander leaves: Chopped
Salt as required
Oil as required

Ennai Kathirikkai Kuzhambu Recipe Sautéing ingredients
Mustard seed: ½ tsp
Urad Dal: 1/2tsp
Curry leaves: as required

Ennai Kathirikkai Kuzhambu Grinding Ingredients
Dry red chillies: 3
Coriander seeds: 1.2tsp
Mustard seeds: ¼ tsp
Fenugreek seeds: ¼ tsp
Pepper: ¼ tsp
Ground nut: 1tsp
Poppy seeds: ¼ tsp
Til ( gingley seeds): 1tsp
Grated coconut: 1.4cup

Ennai Kathirikkai Kuzhambu Recipe Preparation
  •  Fry the grinding ingredients, by adding 2tsp of oil.
  • Keep in low flame to get the ingredients friend well.
  • Grind the fried ingredients like a nice paste and keep it aside.    
  • Then grind the raw onion and tomatoes separately. Keep it aside
  • Take a pan and add oil, fry the ground tomato onion paste.
  • Then add the ground ennai kathirikkai kuzhambu eggplant curry.
  • Fry this ennai kathirikkai masala for 3 minutes in medium or low flame.
  • Now stuff the masla inside kathirikkai (cut the brinjal into tip broken end joined)   
  • Take the pan, pore 50ml of oil, put the sautéing ingredients one by one.
  • Then add the ginger galic paste, fry well in low flame.
  • Now add the Stuffed kathirikkai (stuffed brinjal) and sauté in medium flame.
  • After the brinjal is cooked well, add the tamarind juice and remaining masala.
  • Cook for 10minutes in low flame and finally add the jiggery and chopped coriander leaves.
  • The delicious Ennai Kathirikkai Kuzhambu Recipe is ready to taste.
