Vegetables needed for pongal kuzhambu recipe Preparation 
Yellow pumpkin, Carrot, Beans, Broad Beans (avarakkai), Sweet potato, and Plantain
Cooked toor dal – 1 cup
Chopped vegetables – 1 cup
Turmeric powder –  1/4tsp
Tamarind juice - – 1/2cup
Curry leaves – little
Oil and salt as required
Powdering ingredients
Red chillies
Coriander seed  – 1tsp
Grated coconut – table spoon
Kadaali paruppu – 1tsp

How to Prepare Pongal kuzhambu Mixed Vegetable kulambu
Boil the vegetables by adding salt and turmeric powder.
Dry fry the powdering ingredients and powder it nicely.
Then add the tamarind juice and ground powder with the cooked vegetables.
The raw smell of tamarind goes off; now add the cooked and mashed dal.
Let to boil for ten minutes. Add 2 tomatoes as per your taste.

Curry leaves – 4 bunches
Poondu  (garlic) -  20 cloves
Tomato – 150gm
Tamarind – lemon sized
Onion – 150 gm
Chilli powder – 2 tsp
Coriander powder – 3 tsp
Turmeric powder – ½ tsp
Ginger garlic paste – 1tsp
Green chillies – 2
Dried chillies – 1
Mustard – 1tsp
Urad dal – 1 tsp
Oil and salt – as per taste

Poondu Karuveppilai kuzhambu Recipe Preparation 
Fry the curry leaves and grind by adding little water,
Grind the tomato separately and extract the juice from tamarind,
Take a pan,  add oil and fry the mustard, curry leaves (whole leaves) onion, red chillies, ginger garlic paste and whole garlic,
Fry the ingredients into golden brown, then add the tomato paste, then curry leaves ground paste.
Add 100ml water, chilli power, coriander, turmeric power, salt and green chillies.
Now extract the tamarind juice by adding 100ml of water and mix with the boiling gravy,
Let to boil for tne to fifteen minutes until the raw small goes. karuveppilai kuzhambu recipe is ready to taste.

Peanut - 2 tbsp
Grated coconut - 2 tbs
Cashew -4
Sautéing Ingredients
Sesame oil – 100ml
Mustard – 1tsp
Urad dal – 1tsp
Curry leaves – little

Stuffed Oil Brinjal Kuzhambu Recipe Prepration
Fry the given grinding ingredients by adding little oil. Do not over fry
Then grind the friend ingredients by adding salt and little water.
Then add the onion and tomato, grind nicely like a paste.
Wash the brinjal and cut like one edge open and one closed
Stuff the ground masala in to the opened brinjal and close it.
Take a pan, add oil,  ginger garlic paste, garamn masala and add the sautéing ingredients one by one.
Now add the stuffed brinjal and fry it for ten minutes.
Then add the remaining masala with tamarind juce, add salt if necessary.
Close the lit and cook for 15 – 20 minutes in medium flame.

  • Dry fry all the ingredients, except chilli and coriander seeds,
  • The ingredients should be fried separately one by one,
  • Then finally fry the chilly by adding 1tsp of oil, stir continuously,
  • Fry coriander seeds by adding little oil.

Tender Kathirikai - 4
Karamani - 1 cup
Grated coconut – 1 cup
Tamarind - lemon size
Tomatoes -2
Sambar powder - 1 tsp
Turmeric powder - 1/2 tsp
Poppy seeds - 1 tbsp
Cumin seeds - 1/2 tsp
Oil - 2 tsp
Mustard - 1/2 tsp
Sambar Onion - 10
Curry Tree - a little
Salt - 2 tbsp or required

How to Prepare Karamani Kuzhambu Tamil Recipe
  1. Soak the Karamani for about three hours and pressure cook it by adding little salt.
  2. Prepare tamarind juice by adding little water and keep it aside
  3. Take a pan add little oil and fry the poppy seeds and coconut coconut. Grind it and make a paste.
  4. Cut the brinjal and put in salt water, chop the onion and tomatoes
  5. Take a pan add little oil, and sauté with muatrad, cumin and curry leaves.
  6. Then add the onion, tomatoes and chopped kathirikai fry until it becomes golden.
  7. Now add the sambar powder, turmeric powder, a cup of water and tamarind juice.
  8. Add salt and let it to boil for some time, and then add the ground masala and cooked Karamani.
  9. Mix well and the lid. Cook for about 10 minutes in medium flame.
  10.   Karamani kuzhambu Tamil Style side is ready to taste.
Note :  While preparing Kathirikai karamani kootu or kathirikai karamani poriyal add little water and cook until it becomes dry. For Kathirikai karamani curry same ingredients and preparation but make like gravy form.

This is the Preparation of Vendakkai puli kuzhambu recipe without coconut Chettinad South Indian Kulambu. Puli kulambu is prepared as a side dish for rice. It is one of the tasty Tamil nadu kulambu varieties.   

Ingredients required for Vendakkai puli kuzhambu South Indian style  
Vendakkai Ladies finger – 250gm
Onion - ½ cup
Curry leaves - little
Garlic - 5 pal
Tomato chopped – 1
 Turmeric powder- 1/2 tsp
Chilly powder- 1 tsp
Tamarind Juice - 1/4 cup
Salt – as per Taste
Asafetida – little
Mustard – 1tsp
Fenugreek seeds – 1tsp
Oil – as per taste

How to Prepare Vendakkai puli Kulambu      
This is vendakkai puli kuzhambu recipe without coconut, this is very special in kuzhambu prepration.
1.   Wash and cut Vendakkai in small circles, add little oil and fry in sim flame for 5 to 10 min.
2.   Takea pan and add little more oil, sauté mustard, fenugreek seeds, curry leaves, asafetida and garlic.
3.   When garlic changed into golden brown, add onion and chopped tomatoes.  
4.   Then add the fried ladies finger, tamarind juice, turmeric powder, chilli powder and salt.
5.   Mix together and let to boil for some time, when it becomes gravy consistency, switch off the stove.
6.   Chettinad vendakkai puli kuzhambu recipe is ready to taste, This is the best side dish for paruppu sadam and white rice.  
7.   vendakkai puli kulambu with coconut ( 1tsp poppy seeds + ¼ cup coconut =grind and make a paste)

Note: if you want to prepare vendakkai puli kuzhambu Tamil style with coconut add 3tsp coconut paste or ¼ cup coconut milk.

Brinjal Kootu Recipe Ingredients:

Brinjal - 1

Green gram dal

Grtated coconut 2 tsp

 

How to prepare masala for Kathirikai Kootu recipe

Urad dal – 1/2

Pepper - 4

Coriander seeds – 1/4tsp

Red dry chillies – 2

Asafetida - little

Dry fry the given ingredients and grind nicely by adding coconut.

 

Sautéing ingredients

Oil – as required

Urad dal  1tsp

Mustard – 1tsp

 

How to Prepare Kathirikai Kootu Recipe

Boil the green gram dal by adding half cup of water and little salt.

If the dal is cooked half, then add the brinjal.

Boil until brinjal cook nicely, add water if necessary.

Then add the ground bangalore kathirikai kootu masala.

Let to boil until the raw smell of the masal goes.

Sauté with mustard and urad dal, mix with the cooked Kathirikai Kootu.    

Brinjal kootu recipe is ready to taste.

 

Note: if the veg kootu is too watery add little rice flour.

In this type instead of type 1 masala you just grind and add type2 masala

Grated coconut – 3tsp

Chettinad Easy Tomato Kuzhambu Ingredients
Sambar Onion – 1 cup
Tomato - 4 (chopped)
Curry leaves – little
Red Chillies - 3
Anise - 1 tsp
Poppy seeds - 1 tsp
Cinnamon  - 2 small pieces
Cumin  seed- 1 tsp
Pepper - 4 or 5
Coconut - 2 tsp
Coriander powder - 2 tsp
Oil – little

How to prepare Tomato kuzhambu in Chettinadu style
  • Take a pan and add half tsp of oil, fry the red chillies. Remove it and keep it aside
  • In the same oil fry the ¼ cup onion, anise, Poppy seeds, Cinnamon and curry leaves.
  • Then remove the pan from heat, add pepper, coriander powder and coconut.
  • Fry this in the same heat and keep aside, then add little more oil and fry the chopped tomatoes.
  • Let it to cool and grind the Chettinad Tomato kuzhambu Recipe masala ingredients.
  • Finally add the fried tomatoes for grinding (2 round is enough after adding tomatoes).
  • Pour 1tsp of oil in a pan and fry mustard, curry leaves, onion and garlic .
  • Now add ground masala tomato mix with the fried ingredients in the pan.
  • Let it to boil for some time until the raw smell goes off.  Chettinad Tomato kuzhambu is ready to taste.
  • You can taste this Tomato kuzhambu for idli, dosa and even it tastes good with rice.
  • Note:  This is also called Chettinad Tomato curry (add more oil and prepare in gravy form)
  • You can also prepare Tomato mor kuzhambu (Tomato more kuzhambu) in the same style of Chettinad mor kulambu but add more tomatoes.

Kathirikai Kulambu Recipe is the most commonly prepared south Indian Kuzhambu. Kathirikai with dal preparation is called samabr and Kathirikai with tamarind and masala is called  Kathirikai puli Kuzhambu. The most common variety other than sambar is  ennai kathirikai kulambu recipe and kathirikai arachuvitta kuzhambu.

Kathirikai Kulambu Recipe Ingredients
Tender Kathirikai  (eggplant )- ¼  kg
Small onion - 200 gm
Coconut - half portion
Poppy seeds – 1tsp Spoon
Dry red chillies - 8
Garlic - 4
Cumin seeds – ½ tsp
Coriander powder - 2 tsp
Turmeric powder - half tsp
Tamarind - large lemon sized
Curry leaves - little
Sugar - little
Mustard seeds – ½ tsp
Salt - as required
Oil - 4 tsp

How to prepare Kathirikai Kuzhambu
  • Cut kathirikai into four divisions (one end cut, one end closed), put in water
  • Grant the coconut and extract juice from tamarind. Chop onion in to pieces.
  • Take a pan, pour oil and add chillies, cumin seeds, and onion fry in sim flame
  • Switch off the stove and add coriander powder, poppy seeds and coconut in the hot pan.
  • Then grind the fried masala ingredients nicely by adding required water.
  • Stuff the ground kathirikai kuzhambu masala inside the brinjal (kathirikai)
  • Mix the remaining masala with tamarind juice and keep aside.
  • Take the frying pan, add oil, and put the sautéing ingredients like mustard, garlic and curry leaves.
  • Then add the masala stuffed kathirikai (egg plant) fry for some time and add the masala mixed tamarind juice.
  • Add salt, sugar and turmeric powder. Let it to boil for some time, when it reaches the gravy consistancey switch off the stove
  • The very tasty Kathirikai Kuzhambu recipe is ready to taste. best combination for rice recipe.

How to Make Chettinad Chicken Kuzhambu Recipe Authentic Style

  • This is chettinad chicken kulambu without coconut recipe.
  • Clean and chop onion and tomatoes in length wise. Fry and grind the small onion
  • Fry the masala ingredients without adding oil and grind like a nice paste.
  • Pressure cook the chopped chicken pieces by adding little oil and keep aside
  • Take a pan, pour little oil and add the curry leaves ginger garlic paste, onion and tomatoes one by one.
  • Then add the ground onion and prepared chettinad chicken kuzhambu masla.
  • Fry this medium until the raw smell goes off and add the cooked chicken.
  • Add little more salt and a cup of water. Let it to boil for some time.
  • Finally add coconut milk, let to boil for five minutes and remove from the falme

Take a pan and fry jeera, pepper and coconut by adding little oil.

Grind the fried ingredients nicely without adding water.

Add warm water and extract juice from tamarind.

Cut the brinjal and put in the water to avoid sour taste.

Take a pan and add oil, then add the mustard and fenugreek seed.

Add curry leaves, garlic and small onion fry well until onion becomes golden brown.

Then add the brinjal, fry well oil until it becomes brown.

Add the ground ingredients, chilli powder, salt and tamarind juice.

Let it to boil for some time, the delicious chettinad kara kuzhambu recipe is ready to taste.

How to make Kathirikai saddam

Take a pan and add oil, heat it and then add mustard, curry leaves.

Then add the chopped brinjal, fry for some time in sim flame

When it becomes golden brown add the chilli powder and ground masala.

Now add the cooked rice and salt with the fried brinjal.

Mix well and garnish with coriander leaves.

Brinjal rice or Kathirikai sadham is ready to taste 

 

Note: The coocked rice should be non sticky (like lemon rice) for the preparation of Kathirikai satham.
